    Most of our exclusive micro lots of coffee come from our community in Las Sabanas. Anything that is produced in quantities smaller than 1500 lbs per harvest year is a tiny, tiny micro lot. However, there are years when a micro lot is even smaller than that. Which is the case with this year's Melados and Maracatus. 

    Simply put, Melado or “honey process” is a coffee that has been depulped (skin peeled off) but left to dry in its mucilage, the sticky fruit coating that lives just underneath the coffee cherry’s skin, or pulp.  

    Each pulping process (removing the seed from the fruit) will give us just another dimension to the flavour spectrum coffee offers. Melados are another coffee that if you haven’t explored already, the spectrum of flavours is sure to knock you off. 

    If coffee was cut-and-dry, it wouldn’t be as interesting to process or even less fun to roast. That is what is exciting about every harvest year. The incremental variations in processing, methodology, and philosophy, creates a myriad of flavours and characteristics that make coffee so enjoyable.
